Here’s a recipe for when you get home a little late from work or school, and you want to whip up something healthy and filing fast!
You just need a few ingredients and about 25 minutes, and you’ll have a big bowl of steaming hot, yummy, comforting, waist-friendly soup. This recipe can be made vegan or vegetarian, just choose the option pertaining to your dietary requests. ♡
If you’re like me, the holidays mean lots of excess yummy foods…turkey, gravy, desserts, chocolate, I really ate a lot. Now it’s time to get back on my healthy eating habits. One of my favourite healthy foods with very little calories is Roasted Red Pepper soup… I make the slightly spicy kind, not creamy..so it’s low in fat and calories, perfect for a diet.

It takes a some time to prepare, but it’s totally worth it. My recipe makes about 6 bowls, so you can keep some in the fridge for later.
