Zucchini Roll-Ups



The perfect snack or lunch! Easy to make and pack to take to work or school ^.^

As seen in this video:


  • 1 medium zucchini
  • 1/2 cup of hummus
  • 1/2 cup of cooked quinoa
  • various vegetables, sliced (I used carrots, red chicory, red & yellow peppers, and sprouts)
  • fresh sweet basil
  • fresh parsley


  1. slice your zucchini thinly with a vegetable slicer. recommended item: slicer
  2. mix the hummus with the quinoa in a bowl
  3. chop all of your vegetables thinly
  4. lay down a slice of zucchini
  5. spread the hummus/quinoa mixture on it
  6. place your herbs down first on the end of one side of the zucchini
  7. place your vegetables on top
  8. roll it up


You can use whatever vegetables you want! You could also play around with the sauce you use, it doesn’t have to be hummus! Some other ideas are roasted red pepper spread or tahini!
