Bean Salsa

This is definitely my favourite summer snack right now! It is so fresh and delicious, I could munch on this all day!

As seen in this video:

Ingredients:

  • 6 medium tomatoes, diced
  • 2 cans of beans (I used 1 can black beans, 1 can chickpea, lima beans and kidney beans mixed) *make sure your strain and rinse the beans well if they are from a can*
  • 1/2 cup of yellow and orange peppers
  • 1/2 cup of green peppers
  • 1 medium red onion diced
  • 1 can of sweet corn
  • 1 cup of fresh cilantro, chopped
  • pinch of sea salt

for the dressing:

  • 1/3 cup of extra virgin olive oil
  • 1.5 tbsp white wine vinegar
  • 1.5 tbsp agave syrup
  • 1 tsp chilli powder

 

Directions:

  • mix ingredients all together in a big bowl
  • mix the dressing ingredients together then pour over the salad
  • add the cilantro & a pinch of salt
  • place it in the fridge for at least 1 hour, or even overnight (I found it tasted even better then next day when all the juices and flavours were mixed!)

 

This salsa is yummy on it’s own, or even better served with nacho chips! You gotta try this one!
