Vegan Chili Bowl Recipe

I made this chili the other night and it is probably one of my favourite things that I have ever made! It’s so healthy, tasty, and filling.. not the kind of filling where you’re full then hungry again an hour later.. girllll this will feel you up for a while! and it’s that feel good full too, not the feeling sick/tired full, if you know what I mean. This recipe is vegan & gluten free by the way! ps- On my computer as I typed up this blog chili kept autocorrecting to child and I giggled to myself as I read over this post.. “enjoy your child”, “I made this child the other night”, so if I missed one of those I’m not a cannibal, just know that..haha..anyways…

Alright let’s start cooking!

Ingredients

  • 1 tbs extra virgin olive oil
  • 1 bell pepper (I used orange because I like it best, you can use whatever colour you like), chopped
  • 1 large white onion, chopped
  • 1 cup of frozen corn
  • 1 can of kidney beans
  • 1 can of black beans
  • 1 can of garbanzo beans (chickpeas)
  • 2 cans of diced tomatos
  • 1 tsp ground cumin
  • 1/2-1 tbs of red chile powder (depending on how spicy you like it)
  • 1 tsp of seasalt
  • 1/2 tsp of pepper
  • 1 tbs of maple syrup (or sugar)

Directions

  1. fry onions in the olive oil until soft (5-7 minutes)
  2. add cumin & chili powder to the onion, cook 1 minute
  3. add the 2 cans of diced tomatoes, stir, cook for 1 minute
  4. add the remaining ingredients, stir, cook for 30 minutes on moderate heat with a lid on it (lid slightly off to let some steam out)

5. put some into a bowl, optional: add some shredded lettuce, guacamole, vegan cheese, corn chips, or vegan sour cream (or all of the above!)
