For me Sunday’s mean; sleeping in, cuddling, relaxing, catching up on work or watching youtube videos I missed, and baking. Especially when it’s cold outside (like now), I like to stay in and do these things.
Today was quite a productive day I think! I didn’t sleep in that late (8:30ish), then I walked Rosie, had breakfast and went to the gym. Today I did the elliptical machine for 40 minutes (on the hill setting, resistance level 6), then weight training for legs + abs. After the gym I made lunch.. which was pasta..again. I’m craving pasta all the time now!! This time I made gluten free noodles with pesto sauce, and I ate 2 clementine oranges after that. Then I took a shower and after I also gave Rosie a bath.. which she hated, as you can see:
her face looks exactly like this o_o haha!… oh well at least she’s clean and doesn’t smell like pee now!
I got a bit of work and reading done after that. The sun was shining beautifully today and we were all warm and snuggled in bed. I love these moments.. just lying there with my dog happily sleeping and doing some work at a slow relaxing pace.
In the late afternoon I wanted a snack. I decided to make some chocolate chip cookies by throwing basically whatever I had in my cupboards together. They turned out yummy! Here’s my recipe:
Taylor’s Vegan Chocolate Chip Cookies
- 1 cup of gluten free flour (I used 1/2 cup of brown rice flour & 1/2 cup of corn flour, you can use any kind of flour you want!)
- 1/2 cup of gluten free organic oats
- 1/2 cup of almond flour
- 1/2 cup of sliced almonds
- 1/4 cup of shredded unsweetened coconut
- 1/4 cup of coconut sugar
- 4 tablespoons of organic dark chocolate chips
- 2 tablespoons of pumpkin seeds
- 2 tablespoons of sunflower seeds
- 2 tablespoons of chia seeds
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of baking soda (I finally found this in Japan!! It’s called ‘タンサン’ on the package which means ‘tansan’ which is BAKING SODA! Sharla, if you’re reading this; yay we can finally bake properly!)
- 3 tablespoons of natural organic unsweetened applesauce
- 3 tablespoons of natural peanut butter
- 1/4 cup of coconut oil
- 1/4 cup of maple syrup
- 1 teaspoon of vanilla extract
Mix the dry ingredients together, make sure there are no clumps
Mix the wet ingredients together until smooth
Pour the wet ingredients into the dry ingredients bowl and mix it all together to form a dough
Roll the dough into little ball shaped cookies (about 2-2.5 inch wide) and place onto a non-stick cooking pan (this recipe makes 24 cookies)
Set your oven to 350ºF or about 180ºC and bake for 10-15 minutes, until the edges of the cookies start to become golden brown
When they are done cooking, take them out and let them cool down on a cooling rack. I ate 2 cookies pretty much just 1 minute after they came out of the oven, when they were will warm and soft and gooey… and it was soo good! That’s why you can only count 22 cookies here ^.^:
Really the perfect pick-me-up treat! These are super nutrient packed with chia seeds (if you don’t know what these are google them! You need them in your life right now- they are so so good for you!), pumpkin seeds, sunflower seeds, almonds, dark chocolate, etc. They’re loaded with healthy fats, antioxidants, fibre and protein which is great for skin, anti-aging, digestion and much more! AND it’s all gluten free + animal cruelty free!! \^o^/
I also packed some in a box to take to my meetings tomorrow, and also some for a friend that I’m meeting for dinner tomorrow night. It’s a great healthy snack to keep your energy and ideas flowing at school, meetings or work! You can keep the leftovers in an air tight container in the fridge or you can freeze them if you want to eat them later!
