I made this chili the other night and it is probably one of my favourite things that I have ever made! It’s so healthy, tasty, and filling.. not the kind of filling where you’re full then hungry again an hour later.. girllll this will feel you up for a while! and it’s that feel good full too, not the feeling sick/tired full, if you know what I mean. This recipe is vegan & gluten free by the way! ps- On my computer as I typed up this blog chili kept autocorrecting to child and I giggled to myself as I read over this post.. “enjoy your child”, “I made this child the other night”, so if I missed one of those I’m not a cannibal, just know that..haha..anyways…

You may have seen it in my recent vlog (click the word vlog to view the video, skip to 8:30 for the recipe), but I thought I’d making it easier by listing everything out here. You can use the vegetables that I did, or you can remove some, or add some different ones, as you like!
Here’s a recipe for when you get home a little late from work or school, and you want to whip up something healthy and filing fast!
You just need a few ingredients and about 25 minutes, and you’ll have a big bowl of steaming hot, yummy, comforting, waist-friendly soup. This recipe can be made vegan or vegetarian, just choose the option pertaining to your dietary requests. ♡
For me Sunday’s mean; sleeping in, cuddling, relaxing, catching up on work or watching youtube videos I missed, and baking. Especially when it’s cold outside (like now), I like to stay in and do these things.
I’ve been working a lot lately on little sleep and I’ve been quite stressed..and my skin is getting bad, i’m tired, etc. It’s time to clean up my diet more. I’ve been turning to a lot of quick snacks like candy or chocolate to pick me up in the afternoon when I’m feeling tired at work, which isn’t good because we all know those sugary foods spike your blood sugar up fast and later it comes crashing back down so you’ll crave even more, it’s just a bad vicious cycle. I decided to come home and make myself a healthy nutritious dinner tonight. It turned out really good so I really want to share my recipe with you guys!
I’m not vegan right now but as of today I don’t eat red meat (for many years now), and I just decided to stop eating dairy (I’m done with eating other animal’s mucous and fluids). Mine was really chill today and I loved it. This morning I was hooked on the Netflix documentary ‘Making a Murderer’. I watched 4 episodes in a row.. with each one comes more twists and turns and it’s just so interesting! I keep finding myself wondering what’s going to happen next and I keep getting confused with who’s side I’m on. The best part is; it’s a true story, I love anything with a true story background.. I’ll probably start watching it again tonight, I’m determined to see what happens at the end now and what the result is. If you get a chance, check it out and tweet me what you think of it.
Anyways… moving on to the real reason why you started reading this post. SO I love Soup Stock (a soup cafe here in Tokyo) and one of my favourite soups from them is their Lemon Chicken. However, because their soups are all seasonally limited, that soup no longer exists, but I still need it in my life. So I decided to make it myself from scratch. It’s actually a traditional Greek soup called Avgolemeno, I’ve had it before at a Greek restaurant too. It’s easy to make, it just takes time (about 3 hours) and it turned out really good! It was more natural and fresh tasting than the Soup Stock one, if I may say so myself ^.^
